Turnip Greens And Rice and A New Prime Parents Club Post

Our CSA started up again two weeks ago so I've been having fun with veggies -- or trying to anyways. I'm determined not to let any veggie go to waste this summer. So far so good, although, I'm not sure how many salads I can eat. Going to have to get creative there. This week's veggies included turnip greens. What in the world do you do with turnip greens? They look like leaves. I probably would have mistaken them for lettuce if there hadn't been a label on the bag. So I googled and found a lot of southern-style recipes, all a little too complex for my purposes. I finally found a recipe on FoodNetwork.com for Turnip Greens & Potatoes that I adapted for the ingredients I had on hand. Baking Mac Without the Cheese

I miss cheese. It’s the one thing I haven’t quite found a substitute for. Most of the vegan cheeses at my local market contain caseins and therefore aren’t completely dairy-free for the food allergic. One product that is dairy-free and works well is Daiya; its my go-to when I can’t go without, like on pizza. Or the baked Mac and “Cheese” recipe I tried for lunch today. I was inspired by the novel Julia’s Child by Sarah Pinneo about a mom who makes and sells organic food for toddlers. There are several recipes sprinkled throughout the book, including one for “Mac and Cheese With Plenty of Dairy.” Its like the title challenged me to make it without dairy. Most of the substitutions were easy, with the exception of cottage cheese. I have not found a dairy-free cottage cheese. (If you know of one, please share.) So that’s where I started to improvise. Disney Parks Chat With Melissa Joan Hart Tonight

Where do you dream of vacationing? A sandy beach? A hip and happening city? A mountain retreat? I've been dreaming of Disney. Seriously. I really want to run the Disney Wine & Dine Half Marathon. Early registration ends today, though, and I don't see it the budget cards for me this year. I also really want to take my son. Not just because he'd love to meet Mickey and the gang but because I hear Disney is a fabulous destination for kids with food allergies. But this dream vacation will have to wait.
