Here’s a recipe for Zucchini Pancakes that I adapted from All Recipes so that its food allergy friendly (milk, egg, peanut). My husband and I loved them. My son thought green pancakes were cool to make but wasn’t too keen on trying them. Next time, maybe. Thanks go to Selfish Mom and her tweet about making these for the inspiration. 1/2 cup flour 1/2 cup Daiya Mozzarella Cheese 1/2 tsp oregano dash of salt and pepper 1.5 cups shredded zucchini 1/4 cup applesauce 2 TBSP chopped onion (optional) Earth Balance Spread or Tropical Traditions Coconut Oil Tofutti Sour Cream (optional) Combine flour, Daiya shredded cheese, oregano, salt and pepper in one bowl. In another bowl, combine zucchini, applesauce and onion. Add to the dry mixture. Heat pan on stovetop to a high temperature. Add butter or coconut oil until melted. Ice Cream Cone Cupcakes
I made ice cream cone cupcakes for my son’s birthday. He asked for a Buzz Lightyear cake but I wasn’t feeling that adventurous this year. I got my inspiration from The Divvies Bakery Cookbook: No Nuts. No Eggs. No Dairy. Just Delicious! since the recipe needed to be food allergy friendly. While there’s a specific recipe for these cupcakes in the cookbook, I decided to improvise and go with my default cupcake recipe, also from Divvies. I’ve tried other cupcake recipes and Divvies Famous Chocolate Cupcakes are his favorite. You can find both recipes in the cookbook. I started by doubling the cupcake recipe to make 24. Then I weighted the ice cream cones with Enjoy Life chocolate chips. I filled each cone with the batter and baked them in a cupcake tin at 350 degrees F for 25 minutes. New Enjoy Life Cookies
I realize its ironic to write a post about cookies when I’m dealing with gestational diabetes. Cookies are not on my diet. However, my little guy is quite the cookie monster and was super excited to see these arrive at our doorstep.* We sampled all four the first day but he had a clear preference for the Double Chocolate variety. Chocolate chip came in second. We also received double chocolate crunch granola, which I mix in a trail mix that he loves, and Mega Chunks of chocolate. I haven’t even opened that bag yet. Its too tempting. What I love about Enjoy Life products is that they are free of the top eight allergens and made in a dedicated facility. And what I love about these cookies – even if I can’t indulge in them, too, right now – its that they are lower in sugar than the Oreos my little cookie monster also adores. Baked Milk Challenge
I thought I’d end Food Allergy Awareness Week by sharing the results of my son’s latest allergy appointment. First a little back story: he was first diagnosed with milk, egg and peanut allergies two years ago via skin test. Since then, only he’s only been retested for peanuts, which came back higher. Last month, we switched allergists and he was retested for milk, eggs and peanuts – this time via blood test – as well as fish, shellfish and treenuts. I am happy to report that the tests for the later all came back negative! Pause for happy dance. He still tested positive for milk, eggs and peanuts, however, his RAST numbers are very low (although, apparently he produces low IgEs to begin with). We're still avoiding direct milk, eggs and peanuts but his allergist recommended that we introduce baked milk and then baked egg at home. And we’ve scheduled a peanut challenge for next year.
